We see the Tags field in our work items, and we see it in the columns in the Work Item query result, but we don't see a way to explicitly search on this field. Any help using this feature would be appreciated.

Tags are a functionality of Team Foundation Server and are not used by Urban Turtle. You can learn more on how to use tags here:
